Gingerbread Protein Cookies

Organic Ingredients


  • 1 cup almond flour
  • ½ cup pea protein
  • ½ c Omega3Nutraclease
  • 1 tbsp Cheylon cinnamon
  • 1 tbsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • ½ tsp pink salt
  • ½  cup Swerve Brown Sugar or regular brown sugar
  • 1 cup almond butter (room temperature)
  • 1 tsp vanilla extract




  1. In a medium bowl stir together all the ingredients.
  2. Form the dough into a ball and refrigerate for at least 30 minutes.
  3. Preheat the oven to 350 degrees F.
  4. Line a 2 cookie sheets with parchment paper.
  5. Place the ball of dough between two large pieces of parchment paper.
  6. Roll out to 1/4 in thickness.
  7. Use gingerbread mn cookie cutters to cut out cookie shapes and transfer them to the parchment paper.
  8. When you've cut out all the shapes you can, re-form the remaining dough into a ball, roll it out again, and repeat, until you've used up all the dough.
  9. Bake for 20 minutes until golden on the edges.
  10. Cool on the cookie sheet before handling or frosting. ENJOY!
