Seafood Curry

Organic Ingredients:

 

  • 2 tablespoons extra virgin olive oil
  • 500 g fish fillets (cod or halibut)
  • 250 g peeled shrimp
  • 1 white onion, diced
  • 4 cloves garlic, minced
  • 1 red pepper, sliced
  • 500 ml full fat coconut milk
  • 1 cup tomatoes, diced
  • 1 cup green beans
  • 1 cup vegetable broth
  • sea salt to taste
  • freshly ground pepper to taste
  • 1 tablespoon cumin powder
  • 1 tablespoon ground red paprika
  • 3 tablespoons madras curry powder
  • 1 teaspoon cayenne pepper
  • 2 tablespoons Omega3NutraCleanse®
  • 1/4 cup fresh cilantro
  • 1 tablespoon crushed chili
  • 1 lime, juiced

 

Method:

 

  • Wash and cut fish into small bite sized pieces.
  • Season fish and shrimp with freshly ground pepper and sea salt.
  • Heat extra virgin olive oil in a large skillet over high heat.
  • Add fish and shrimp and cook through until it’s a little golden brown on the edges.
  • When cooked, remove fish and shrimp from the skillet and set aside on a plate.
  • Reduce the heat to medium high and add onion, garlic, red pepper and cook for 2 minutes.
  • Next add coconut milk, diced tomatoes, green beans, vegetable broth and stir well.
  • Add spices, salt, pepper stir well and bring it to simmer.
  • Cook for 15 minutes.
  • After 15 minutes return fish and shrimp to skillet and cook for 3 minutes.
  • Remove from heat and stir in Omega3NutraCleanse®
  • Garnish with fresh cilantro, crushed chili and lime juice.
